Le livre a été écrit par une Britannique au temps de l'Inde coloniale, dont les bénéfices allaient à des œuvres charitables. En complément du livre, il y a une facture d'un magasin Standard Stores, situé à Pondichéry daté du 12 juin 1955, pour une commande de farine. 330 recipes - Most of the recipes are vegetarian, excepted N°77 to 83. Many of the recipes are suited to present austerity conditions, but some of them contain ingredients not yet redily obtainable - in the hope that conditions will improve. Some pratical points: Agar is made from seaweed, and is known in the shops as China grass or Iceland moss. The advantage of agar over gelatine is taht it does not require icie to set it, and also that it is much cheaper. Agar does not seem to be obtainable at present in India. Eggs in this book are Indian eggs ; if English eggs are used, the number in the recipes must be reduced. Brown urefined sugar : this can be bought in the bazaar ; if preferred Demerara may be used, but it is more expensive. Wholemeal flour or Atta : if there is difficulty in obtaining this, get wheat and have it ground in the bazaar to the necessary fineness. Gur = jaggery in South India ; or molasses. The recipes have been gathered from various quarters and many of them have undergone changes in the course of experiment to suit Indian conditions. I am grateful to many friends who have generously permitted me to print recipes they have given me.
